 Post subject: YASR (Yet another Sujihiki Recommendation)

This time looking for a sujihiki 270mm at the 150$ range. I was looking at carbonext, which sells for 139, and for Sabatier 4 stars elephant, which sells in the UK for about the same price shipped - plus the advantage of not having to go through customs - these come at 250 or 300mm, there is no 270mm (http://www.sabatierknivesuk.co.uk/carbo ... atier.html). I know some people here are fans of Sabatier, and I would like to try one just for curiosity sake. What do people thing of this, how does it compare to carbonext sujihiki ? I know both come with bad edges from the factory and will require sharpening, and that Sab carbon are indeed carbon, whereas carbonext is more like semi stainless. Any other recommendations in this price range ? Kikuichi perhaps ? I was looking also at the Misono Swedish, it's somewhat above what I want to pay and from what I read it seems exessively reactive, is it not ? Masamoto HC looks very nice, but is above my range.

Fujiwara FKM or FKH series suji's are supposed to be nice. I got to play with the 270mm carbon one a while back, nice and thin! The Artifex 270mm suji is decent as well, too and really shines if you thin out the edge a bit. I have a Kikuichi Elite 240mm Carbon gyuto and it takes a nice edge, so the Kikuichi Carbon Suji should be another good choice as well as the Misono carbon.

The Kikuichi Elite Carbon suji was one of my first knives and I believe the 3rd I rehandled. I like it a lot. It's not some really super great steel, but it has good geometry, and a great edge profile. It holds an edge well enough and sharpens easily.
