Hi this is tom and i worked about 3 yrs in sushi business and i am using konouke270mm gyuto by cktg's recommendation and i love it. But now its time to buy yanagi and i am thinking about 300-400$range i was looking into doi knife last year but the price went up so high 400》580 so i had to g8ve up
So anything similar to white dragon doi knife or anything better would be really great for me haha
Im right handed looking for 270-300mm yanagi price range 300-400ish thank you so much and look forward to hear from great forum ppl ^^

The Konosuke Fujiyama is an outstanding knife, made in Sakai and I think you would love it: http://www.chefknivestogo.com/konosuke1 ... 5tP8vldVVI

The guy that forges these knives is a master smith and they also use a top sharpener to finish the blades. It would be a great knife for a pro like yourself that will be using the knife often.

I've never used nor handled a Doi. With the utmost respect to Doi-san, I have a Yanagi by Shiraki-san (not a Tamashii), and I speculate the Tamashii by Shiraki-san is very near the level of the Doi Dragon. It is clearly not the historical keepsake a Doi is, but performance wise... I would see if $400ish can reach $480.
