Very nice work Mel! Nice uniform scratches on the jigane I really like the matte finish.

UMBERTO <> Always proves difficult for me to take pictures of myself using a knife; haven't quite figured that one out, yet. I reckon, stills from video, but I don't foresee my setting up video during service. I'm just too busy at work to bother most of the time. I did ask a dishwasher to snap a shot on my iPhone as I was slicing the breasts of five 15# birds for Thanksgiving. His framing was poor, and he was on my left so I had to flip the knife for any of the face to even be captured; otherwise, you would have just seen the spine. Gives no justice to the knife nor the exquisite iridescent blue poultry patina, but it's all I got.
