Thanks for your suggestions. I am still undecided, and still worried about sharpening. Will the digital angle cube help me to keep to the proper angle even without some rig like the Edgepro? I just ordered Chad Ward's book, so I assume that there is sharpening info there. I'd hate to buy an expensive knife and then muck it up through my ignorance and clumsiness.

You're overly concerned. Once you practice on a beater knife in your drawer a couple times you will get the hang of it pretty quickly. It's like riding a bike. Before you try it looks very intimidating but after a couple attempts you get the hang of it and you never look back.
