I work at a college campus and well, even the Seniors aren't all that mature or level headed yet! Good job showing the skills, but being humble about it. Let the actions speak louder than words!

Congrats! Enjoy working there. They will not pump you up. Stay humble, listen and learn if you want to become "one of the guys". The first sniff of conceit, they will make your job less enjoyable by the day.
I don't work in the kitchen. But know and work with many that do.

For Taz and whoever else cares.

The night went on and their service is very organized but rather dull I might add. Now I know they were one hand up with myself helping so this might have made it feel slow.
I've always used a KDS system or someone calling orders to my face, but the expo is on the opposite side with their backs to you most of the time in an open kitchen. Very difficult to hear at times.
The dishes are quite posh. But it's a learning experience and for that I'm glad. Just a whole different philosophy than I'm used to.

Organized service is a good thing, dull night means things went according to plan and they have their stuff down cold! It shouldn't be like Chef Wanted with people screaming in your face :) Each kitchen will have it's own pulse and rhythm and feel, so it's good to get a feel for it and see if you can match up with it. You should be able to learn a lot there and also have a lot of fun!!

Congrats on the new position!! As an outsider to the pro environment, I find it interesting how much variety there can be to running the back of the house.
