We have a massive amount of Edge Pro products so we figured it would be good to have a whole section on how to use the machine and what to use on it.

I have visited youe website and done just about all the research that I can and have decided that I'm going with the Edgepro for sharpening.
But, I'm not sure which version I should buy. It'll be used mostly for kitchen knives (chef's, paring, etc.) and occasionally my Swiss army pocket. I don't want to over buy but an the same time the system has to do the job. I've emailed Ben at Edgepro and told him of my needs and he believes a super polished edge might be overdoing it. But I will concur with whatever set you would suggest.
My other concern is if the coarsest stones included in the sets will be coarse enough to take care of a pretty dull edge.
I feel that the Edgepro is the only way to go. And being in Wisconsin, I'd like to purchase it from a reputable dealer.
In closing, I'd appreciate any help you can give me.

Yup, the set Mark posted the link for is the best. Add a diamond plate and your good to go on any steel made.
