I’m looking for a sujihiki. I’ve spotted a few, thanks to this forum. However, I can’t see them or feel them. Which one would you take? And why?
Important for me is that it is a great slicer (mainly fish and meat) and that the handle is not too small (large hands).

Of those three....Takeda.
Can't comment on handle size compartively though....sorry!

I believe the Moritaka should have the biggest handle of the 3.

Try the Takeda. Great steel, nice and thin and light. I like his gyuto a even better but if you don't own one a Suji would be a fine one to try.
