Thanks for your fast reply. Please may I ask your advice?
I've watched your sharpening vids, which are really good. However, due to having MS, it's difficult for me to keep a constant angle on a blade when sharpening. The WE system looks like a winner.
A couple of questions:
What's your opinion of the WE system?
If you rate it, please advise what I need to buy. It will be used for sharpening japanese cooking knives. I won't need a base but I would like a stropping 'stone',

Both the WE and the Edge Pro should be easier for you since the guided systems help you hold the knife in place and allow you to sharpen at a consistent angle. If you choose the WE system the base set of stones along with their ceramic stones should be all you need to get started. If you choose the Edge Pro I like the Essential set that we put together as a good set.

The WE holds the knife in place whereas the EP requires you holding the knife on the table, so minimal hand coordination requirements goes to the WE. There is still some skill required using any system to be fair, but to get a knife to a servicable edge and not injure yourself in the process, the WE is a good option. The stones available for the Wicked edge include Chocera and Shapton stones. I also cut natural stones, Atoma diamond plates, strops, etc etc for the WE, so you really aren't limited in your stone and abrasive selections on the WE. I really wouldn't consider any other systems other than the WE and EP.
