Mark, reading the edge pro forums on your site I see the shaptons are highly revered. Is there a few grades that you would recommend?. I have just been using my stock edge pro stones and the XXC plate so far.

I think They're ideal for the EP.
If you wanted to start with a basic 3 stone progression for kitchen knives, I would choose:
You could tweak this based on use habits. For instance, if you were sharpening a lot of knives in a small business setting you could speed your work by switching the 500 with the the 320.
If you like a more polished, refined edge you could do 500, 2K, 6K etc. If you wanted to incorporate the shaptons with your existing EP stones you could do 4K, 8K.
