The Pro was designed for folks who sharpen knives a lot, as in a business so it's bigger and sturdier. You can get the knives just as sharp with the Apex model so unless you plan to sharpen a lot of knives, go for the Apex and then splurge on the stones. I agonized over the decision between the two models for a long time, I finally spoke to Ben Dale about it and went with the Pro as I was about to start a business. I picked up the scissors attachment a couple of years later so the Pro for me was the right choice. It is definitely more heavy duty but as I said, it does not get the knives sharper than the much proven Apex.
If on a budget like most of us and you are sharpening your own knives only and some of your friends/family, go for the Apex.

Maybe try a thin piece of plastic instead of cardboard , you could duct tape it to the table?
Lucliky I have a DMT dia sharpener for the small blades which works for me.
