 Post subject: Which knife to get for general purpose workhorse?

I'm set on buying one of your knives and I'm pretty sure I'm gonna get an addict. I would get the laser but I sometimes have to cut up proteins and dont have time to change knives at my work. I really want to know more about the new kohetsu knives. Will they be clad in stainless? How tall will they be? Every time I've asked on the forum about addicts I was told to get the laser. Even asking about brands other than Richmond I'm only told to get the laser but as much as I love the sound of it it won't fit my situation I don't think.

The Hiromoto is stainless clad and under 200 and has aogami super steel on the core. It's a great knife.
The Goko gyuto is a really good knife too. Hand made and has excellent performance.
My aebl laser is in your price range and has a nice thin grind and I recommend it.
My addict is tall and uses good steel but some complain its a little thick behind the edge but that might be an advantage for you.


I'm not quite sure how rough you want to be with your knife but these are used as general purpose knives all the time by pros and they work well for most.

So the laser would be Ok for breaking down chickens? Or other type of heavier veggies like squash or artichokes?

You're not going to want to cleave through any bones with any of these knives. The other stuff should be fine. I would reserve a thick wusthof or a western deba like the one Tojiro offers for chopping small bones and other hard stuff.

Bryson,

Consider the Richmond Ultimatum.

The blade geometry is perfection. The only other knife to combine the action which is a product of that kind of geometry with all-around usability is a carbon Sab. In one sense that's not surprising because the Ultimatum's profile is copied from the Sabs'.

It's no lobster cracker, but it laughs (Ha!) at the everyday tough stuff in ways the Addict can only imagine. AEB-L is easy to sharpen, and heap-much-plenty tough. Carbon 52100 is even tougher and more abuse loving than AEB-L; and not particularly reactive, btw. The Bohler 390 model is also more durable than AEB-L and holds an edge forever.

At 7oz it's not a heavy knife by any means. But (bummer!) you'll think it's heavy the first time you pick it up. The Ultimatum's balance is very blade forward and will take some getting used to, especially if you're coming from western-handled knives. It took me about half an hour of use to reconcile myself to it, and another few hours before it became invisible. At this stage of the game it not only feels lighter than my Sab carbons (which it is, by almost 3oz) but more agile as well.

I've removed the chine and tips from rack after rack of raw ribs, and portioned them after cooking without hurting the knife in any way. I've also split the odd chicken, but face it, it's a dumb idea.

The edge geometry can benefit from some thinning. The 51200 can take and hold a fairly high polish (say 8K); no doubt, the other alloys can as well.

I don't know why Mark isn't more enthusiastic about suggesting the Ultimata; maybe he'll share.

Anyway... something to think about.

i am considering all the richmonds but the ultimatium is out of my price range. i wanted to stay around 200. i was pretty set on the addict but it doesn't seem to get as much love as other knives on the site but its a great price for me and looks to be thin but not quite as thin as the laser. i am considering the richmond laser also. i wish i could have both! i guess it will come down to whats in stock when i've saved up the money. i'd also want a saya for the addict which seems like it might be hard to come by

Another option would be to get the knife you want for 90% of your work, then get something like a $30 Forschner/Victorinox chef's knife and use it for tasks like splitting hard squash and hacking bones and lobsters.

Richmond Addict is a very nice knife that I wouldn't hesitate to get if it met my criteria.....which, in this case it seems to.

Like Mark said, don't bust bones with it....but almost everything else is fine. I use what many consider a laser knife for all the things you mentioned (minus busting bones) with no problems at all.
