Which Edge Pro for me?

I'm looking to purchase and ege pro sharpener and would like to get the best kit for my application. I am comparing the edge pro essential kit vs apex 4 versus the basic kit. It is for home use and will be used for Global and Chicago Cutlery stainless steel kitchen knivies and Rapala filet knives. Is the 500 grit sharpton in the essential kit a low enough starting grit? The knives are not damaged and have been kept sharp.

Hi Scott,

I think you should get the Essential kit. Yes the 500 is fast and cuts well. You won't have a problem grinding with that stone. I put this set together to give you the best stones and accessories available at a reasonable price. The shapton glass stones are perfect for the edge pro.

500 should be fine for a starting grit IMO. The only real reason to go lower (again IMO) is for blade repair, and that is just for faster metal removal so you won't be grinding away all day to remove a chip or re-shape a tip.
