which 240 gyuto should i start saving for?

240mm gyuto

1. Are you right handed? yes
2. What type of knife are you interested in (gyuto, nakiri etc..) gyuto
3. What size knife are you looking for? 240mm
4. Do you prefer carbon or stainless steel? whatevers best for my situation. i like the look of carbon better
5. Do you prefer a western handle or a Japanese handle? definitely japanese
6. How much did you want to spend? around 200
7. Do you know how to sharpen? learning on a white #1 yamashin santoku. i have a 800 and 6000 grit combo stone

i work in a country club in central california as a line cook on the cold line or garde manjer. i do a lot of prep of different vegetables
from cucumber, carrots, peppers, artichokes, onions, garlic, lettuce, mushrooms, you name it. almost anything you could find in a salad or on a pizza. sometimes i would maybe even use the knife to cut up a small pizza or cut cakes or protein. basically this knife will be used for everything. i will also use the knife at home a lot cooking every type of food i can possibly learn. Sometimes at the restaurant it can be busy where i wouldn't get to knife my knife dry for awhile so i'm wondering if maybe carbon is not a good idea? i love the look of the masakage yukis and the gokos. i was looking at richmond lasers and the takayuki grand chef. is it better for me to get something with aebl steel because i may not be able to wipe it off for up to 30 minutes sometimes? i want the knife thinner than my messermeister meridian elite 8 inch chef. any help would be great i'm still learning a lot thank you in advance for all the help i've gotten in other threads you guys on this forum are absolutely fantastic thank you.

tanaka damascus is also interesting but out of stock and i realize the yuki gyuto is too. i should also mention i rock cut and i chop depending
on the ingredient. i'd definitely wanting to have a saya for it too i don't remember if they all have saya options. thanks again guys

I would say the Tanaka Sekiso and Richmond AS Laser 240mm are my 2 favorite 240mm gyuto's, followed by my 52100 Addict. The Takayuki Grand Chef may have a bit softer steel in it though. As far as carbon, just wipe it down periodically. Most people have a towel near by for this and say it doesn't really slow them down at all.

You've picked quite different knives all across the board. :)

The Richmond Laser is the only true laser in the group.....so if you're after a very thin, laserish knife that would be your best bet.

The Masakage Yuki and the Goko are kind of similar. The Yuki is maybe thinner than the Goko. I like the handle on the Yuki better, but the blade on the Goko more.

The Addict 2 is a great knife....a lot like the Laser, but taller profile and not so laserish.

The Takayuki, I'm not a big fan of but it's still a good knife.

The Tanaka is the only full carbon in the group and an outright great knife. Not a laser, but certainly not thick. Good steel, typically good F&F

Kind of depends what attributes you're after.

Are the lhe lasers not very tall? I don't know exactly how tall I'd want a knife but definitely not short. The lasers look short in the pics. I'll have to watch the video again. Any other suggestions for knives with steel that won't react? After work today I realized my current position would require aebl or some other stainless steel or something close like the yuki

The AS Laser isn't short, but isn't as tall as the Addict. I really like it, it is VERY thin behind the edge, but has a good feel to it, doesn't feel wimpy! Or get one of the stainless Addicts and thin out behind the edge a bit.

I like my gyutos 48-50mm tall. They feel more nimble to me and I have more control. Once they start to get around 55mm it feels more like I'm swinging around a large piece of sheet metal, but of course it's all personal preference.

in the video it looks almost like your knuckles would hit the table with the laser on a pinch grip. does this happen?

For clarity, I think we should separate blade width (which is what makes a knife a laser) from the blade height, which is really a separate issue (and somewhat personal preference). 50mm or right around 2 inches seem normal height for gyutos, and I don't think many people have issues with knuckles hitting the board with knives of this height. Some seem to prefer taller knives, others shorter ones, and some like both.

I've not had any knuckle clearance on any kitchen knife I've ever used except a Thomas Haslinger. No laser, or any other knife has ever given me any trouble in that dept.
