I’ve had maybe two days off in the last 4 weeks; I’m owed over 2500 hours in back compensation over the last 2 years. Last time in the South of France was for 49 days; I worked 19 hours a day for 47… 2 days off, I was comatose. I’m 19 hours in on a 35 hour shift. I’m prepping for a “kosher-style” party of 104 confirmed tomorrow. We have a Nobel Prize Winner on premise for an Israeli Cancer Research Foundation. I have to deal with a Kosher caterer of whom will be catering to a select 12 devout Kosher. I have to set him up in a satellite kitchen, after it has been blessed by a Rabbi, of course. I have numerous VIP assistants changing special instructions daily. I have numerous principals complaining about nothing to push down on others shoulders to elevate their own egos. I have product that I had to return, and I’m waiting for that purveyor to do right in the morning… which weeds me further. That is but a fraction, but I don’t have the time nor desire to divert my focus anymore than this just did. Just know… cooking is the easy part, you don’t want my job.

Oh, NYC... I worked on Central Park South (59thW) & 6th in The Ritz Carlton. I had clients from 09 till 2011 that own the 23rd floor. I was domiciled between Lex & Park on 94th.

I do property management and rentals of vacation villas in Cabarete, Dominican Republic. In my vanishingly few off hours I cook stuff on the grill.
