set up a weekend to stage

drove my happy ass to WV and worked like a demon for 3 days :)

I am self-employed. I do home maintenance. I do home repairs of all types for homeowners and have a client that owns several rental properties I take care of. Take vacations when I want, stay home when I'm sick, answer to no one, well.......except my wife.

I clean draft beer lines for a living in Brooklyn (use to do Manhattan)
Couple side jobs/clients (cleaning and draft system installs)
small interest in a bar with cheap bar food [our kitchen guy (don't have a chef) uses an IKEA chefs knife]
IKEA is not a Japanese word, it's the Swedish furniture store/mega store.

I basically go to 4 to 6 bars a day to do cleanings. I am the guy they call at 10 pm Friday night and say.. help none of our draft beer is pouring, need it fixed now because we are 3 deep at the bar. Mother in-law calls me the "draft Dr" without the Dr salary. She calls it "emergency surgery" if she finds out I left my own home after 8 PM.

Here is the kicker.. I hate beer, can't stand the word "craft" beer, and everyone in Brooklyn & Manhattan keeps building bars with 30 plus beers on tap while they don't know a thing about the business or draft beer. Habanero pepper infused cask beer anyone!

I work at a corporate restaurant called Bonefish Grille where my creativity and passion is stifled. :roll: They do have good food though and when I started there they did actually make just about everything from scratch but unfortunately this has changed.

I plan on finding something a little more fine dining based as soon as I get back on my feet.

Trenches of the jersey shore-- not sure what you mean by that but a summer gig at the beach sounds awesome. And props working with Garces he seems like a cool dude and super talented chef.
I looked up le belle vie in MN- menu looks great. I've heard Minneapolis is beautiful. Super clean city.
I'm not familiar w/ greenbriar but ill ask my pastry chef- she's from WV
And a beer line cleaning knife fanatic in the house- awesome. What part of BK??
