 Post subject: whats the easiest knife to resharpen?

mine was a shirogami don't know the maker unfortunately.

what about you guys - looking for a new knife thats really easy to sharpen and takes an amazing edge?

The least dull one.

As for easy to sharpen, I would agree white steel is pretty easy.

I would have to go white or blue. Some of the super stainless are pains compared to them.

a taller one, such as a nakiri or gyoto, instead of a paring or petty. IMHO, it allows for better grip on the blade and better control of it while sharpening.

Indeed, a tall and flat profile is easier. I'd add a santoku as a good starter.

A nakiri made from well heat treated AEB-L, 52100, or white steel. That's like the perfect knife to sharpen. :)

+1 on a good carbon edged Santoku. I've found knives w/flatter profiles like a Santoku or Nakiri are easier to sharpen than longer knives with more belly.

My dad has an old carbon sabatier that seems to get sharp just looking at stones, aside from that 52100 steel is ridiculously easy to sharpen.
