My cck 1103. Soft carbon steel. A few passes on a king 1000 and a burr is raised.

At least among good knives. I find you can sharpen cheap grocery type knives really easily because you don't expect them to be really sharp anyhow so you don't get to go to real fine edges. But the other side of it is though easy to sharpen their edge retention is poor too. Easy on, easy off.

Cck 1103. Nothing is easier, it's tall, has a completely flat profile and is soft carbon. You can raise a burr by just threatening to soak your stone.
