What would be best Konosuke for a culinary student

I was just very curious about your Konosuke knives. Which would be better for a student in a culinary school. i have three years of experience handling knives, but was curious what you think i should start out with. i was defiantly looking for a santoku or gyuto.

You'd pretty well have to give up some additional details......anything really will help.

That said, I'd probably start looking at the HD2 knives and the HH knives.

+1 w/ AM. Really need some more info - check out the sticky at the top of the Knife Recommendation page, and answer the questions.

Shooting somewhat blind - Just my $0.02, but I'd shoot for gyuto - just more versatile, and the increased size can blow through product faster. Konos are great knives. The HD2 has a big following, and for good reason. Had one in my hand, felt like a nimble sports car and ripped through veggies with a smile.

I am right handed. I think I would like to try out carbon. I've heard many good things about carbon steel. I'm willing to spend anywhere up to 700. If the knife is more than that, I will still consider it. Probably 210-240mm

With kind of budget I think you would enjoy this more than a Kono, I would, Teruyasu-Fujiwara Nashiji 240mm Gyuto: http://www.chefknivestogo.com/funa24gyocha.html

I'm curious why you would suggest this Jeff? I'm not agreeing or disagreeing, simply curious - I own both and have my own thoughts.

That budget would probably get you two nice Konos, I would never take them anywhere near a Culinary school. HD2 or W#2 are nice, depends on how much attention you can pay to it.

The Fujiwara Nashiji is getting hyped a lot around the forum recently, a lot of us here would love to pick one up to try out. White #1 at HRC 64/65? Insane. I'm probably going to order the petty at some point this week. But if I do the 210 will coincidentally be this month's next special......

I don't have enough to do these for the special so that's not going to happen. ;)
