During the middle of the dinner rush, someone requested that we make them a special vinaigrette on the fly because they didn't want any of our house dressings. I'm not the Chef, just a line cook, but when my expo came over to tell me this and told *me* to just do it (as I was busily plating), I almost flipped out.

I had an couple of Australians staying at the hotel I used to be a sous at and they were hammered! They had been chatting up the waitress that was servin them and they were trying to come up with weird requests for the kitchen so the waitress came back and had me go to the table. I got out to the table and ask them what I could help them with and they said they wanted a fried banana stuffed with ice cream covered in peanut butter on a bed of asparagus drizzled with chocolate sauce and a dollop of whipped cream! I was shocked but bored enough to take on the challenge. I made the stipulation that if I were to pull it off that they had to name the dish. So I went to work I cut the banana in half and got out some vanilla ice cream that I had made earlier that day. It was frozen hard so I cut a peice out that was vaguely the shape of the banana. I squashed the ice cream together with the banana and threw it in the blast chiller, went and grabbed the peanut butter and pulled the banana out and rolled it in the peanut butter grabbed some cornflakes we had on hand and rolled it in them then stuck it back in the. Last chiller. Grabbed the asparagus and made some chocolate ganache and whipped some whipped cream in a blender with a little makers mark. Pulled the banana out and fried it. Then went to plating tryin to make it look as haute as possible. There are pics somewhere out there wish I had had the presence of mind to take on my self. So I come back to the table with this monster and a shit eating grin all of about fifteen minutes later to there suprise. And I present the dish and calmly ask what they have decided to name it. Some discussion goes on at the table and then the verdict comes. They decide to name it the dingos dick. They thank me and tell me they now have a story to tell about dining in America. They then dive in and eat it to my suprise. It was a great game of I dare you and maybe the most fun I've ever had in a kitchen. To this day I always gladly accept any request for anything strange. I love improvising and thinking on my feet I think that's where creativity is at it's best!!!!

That's even cooler that they ate it. Most drunk people I've ever dealt with would make that kind of request but then cancel when it got there to be jerks. Good sports.

It was free totally worth seeing the look on their faces!!! The waitress got a hundred dollar tip did she share it? Of course not lol!!!

which is why it's good to hold an agreement with them to share it with the cooks, not that they ever do it. unfair it is, unfair. we work harder than them and they get all the glory.

I don't worry about tips so much it's just really hard when you work in an open kitchen and at the end of the night the servers are counting out their tip and it's in the thousands!! It's hard to fathom whoring myself out and often times I contemplate why I choose this area of the service industry. But in the end the satisfaction that I take away from the job I do outweighs the pay scale that I have chosen!!!!it seems to me that it's a twisted industry that burns people out and chews them up to ground meat I have the satisfaction everyday that I survived and did it with a gusto usually reserved for heros!!! Lol what we do is a noble and true profession with little thanks and even less recognition!! It's not all its cracked up to be and somedays I wish I would have known that before I started but other days I see it as a blessing. We are the fine artists, the great dancers, the astounding athletes, the peace makers, the prophets, and finally the ones who are at the heart of this industry!!! I prefer the term heart of the house tho back of the house!!! I was taught that we do everything from cookin cleaning and service to the most humble things like plunging toilets!!! I just today have been everything from a dishwasher to host from baby sitter to bad ass and from good guy to bad guy and this all took place in a fourteen hour shift! My usual lol how can you not hate/love this job / career/ nightmare/ calling! I hear a confession everyday and I give one myself and this is all in the duty of my job ill give up all my knives all my stones and my career if anyone else can name a job where you have to do all these things in one shift!!! I say kill em all and let god sort em out!!! That's my mantra and I live by it every day!!!sorry for the rant things are piling up and I have no other outlet I feel you all understand here! K a a lol knife addicts anonymous. Lol that's my story and I'm sticking with it.
