Sorry for the email bomb, but I finally have time to write an email.
I am a professional chef. I could use to update my knives, I like to buy mid-priced workhorses as i work them very hard, I recently was using tamahagane for a gyuto and slicer. I have always felt very comfortable beating up on some shun classics, I have a kikuichi which is my favorite, just bought a new one from you to update.
I purchased the masakage which worked wonderful today, fell in love with it. You said it was one of your favorites? Can you tell me maybe 4 or 5 of your favorites as Im looking to purchase a few more knives before I go. Look forward to hearing from you.

Here are a few of my favorite mid range priced gyutos on the site. I don't know what size you want but I'm guessing stuff between 210 and 240mm. All of these could be used for a pro like yourself and should be better than the knives you listed. Just remember I'm factoring in quality/price in my list here. Most are in the $150-$200 range.
