What are your order volumes in the southeastern US versus the rest of the US? From my experience; there is a big culture in the southeast with men having an inherited (learned) ability to cook well. That, of course, doesn't mean they have a knowledge of good knives, but it seems as though it's a lifestyle "'round here." I don't have a single male friend that doesn't have some sort of "recipe" for something that was handed down.

Newest Yanagiba sharpening this is new and has hardly any edge on it at all when I got it. I started and finished on j-nats

We do seem to get a lot of orders in general from the south. Lots of guys that are interested in sharpening in particular from the south.

It's like we say down here we my have lost the war but we won the BBQ battle. Proven by all the yanks moving south first to Florida and stopping in north Carolina and staying the local paper calls them halfbacks you moved all the way south and only made it half way back. Every time I go in a grocery store I try to guess the axcents. Boston, new York and which part of new york than Ohio, it's like a new experience every time I go to the grocery store. No malicious intent was meant by this just fun! Bullman
