I own the Shapton glass stones 1K and 4K. For flattening, I have the DMT extra extra coarse plate. I'm considering strapping to give the blades a final touch. The question is should I get a finer stone such as the 16K or 30K before moving to strapping? If yes, why?
What sort of strapping set/combination would you prefer? I use the Konosuke HD Gyuto as my primary knife, yet I plan acquiring a German knife such as a Wusthof for splitting bones etcetera.

Hi Martin,

After the plate, 1k and 4k I would get these items in this order:

500 stone: shortens sharpening time
8K stone: adds a nice finish beyond your 4K. You can use this stone as your "strop"
Leather strop with boron carbide: This is usually where I stop although you could end with the 8K and be done with it.

Umm, unless it's for the pure purpose of burr removal, a strop won't do much after a 4k stone.

Most of the stropping compounds are akin to a 20,000+ grit edge, so making that large of a leap doesn't do much.

I would definitely want a stone between the 4k and the loaded strop.....an 8k GlassStone if you're liking them.

An 8k GlassStone will provide a wicked sharp edge.

If it were me, and forgive me but I'm not a huge strop person, I'd get this set:

An interesting alternative here is the 1.5 micron CBN - equal to 12,000 grit.

If you don't want to go to an extremely fine edge, this is a reasonable alternative to consider. I agree that jumping from a 4k stone to a very fine compound is not an optimal choice. Or you could stop at 8k which is 2 microns. The slightly higher jump to 1.5 is very reasonable. A balsa strop is also reasonable here too.

It's a slippery slope. Once you start adding stones and strops you wake up one day and find you have 20 of them.

That said, I would also add a good low grit grinder for extra speed. I love my Nubatama 150 and I've been giving it a work out lately for quick metal removal. It's super fast and leaves a nice finish.
