I'd also like to order a gyuto. I thought the Misono UX-10 would be top notch, but on the forum Adam warned me that the steel is not so great.
My criteria are simple: stainless steel (truely stainless, so eg no Konosuke HD) that is able to take a very keen edge (edge retention is not so important - I'll be sharpening it long before it gets dull) and a very ergonomic western handle for my fairly large hands.
So if it's not the Misono, I was thinking it could maybe be the Konosuke HH with a western handle or the Hiromoto G3. They both seem to have great steel, but I cannot judge their handles just by looking at the pictures.
What would you recommend?

You want a 240 Gyuto

Also, I should be getting more Kono HD Westerns in soon. Maybe 7-10 days. They've been out of stock for 6 months. They're nice knives too.
