What's better than the UX10

Hi Mark,

I'd also like to order a gyuto. I thought the Misono UX-10 would be top notch, but on the forum Adam warned me that the steel is not so great.

My criteria are simple: stainless steel (truely stainless, so eg no Konosuke HD) that is able to take a very keen edge (edge retention is not so important - I'll be sharpening it long before it gets dull) and a very ergonomic western handle for my fairly large hands.

So if it's not the Misono, I was thinking it could maybe be the Konosuke HH with a western handle or the Hiromoto G3. They both seem to have great steel, but I cannot judge their handles just by looking at the pictures.

What would you recommend?

Get's really sharp
Larger handles
Easier to sharpen

Price range?
Are you right handed?

I'll make some guesses that you want to spend 150-250
You want a 240 Gyuto
You are right handed

I love this knife and for the price it's hard to beat. AEB-L is good stainless and easy to sharpen and the knife looks great:


If you want something a little more up scale try my custom Remedy. Adam Marr did this handle and it's gorgeous:

Also, I should be getting more Kono HD Westerns in soon. Maybe 7-10 days. They've been out of stock for 6 months. They're nice knives too.
