OH My. Nice shots, beautiful set up. Was this to determine which combination you like best or do you use each strop for a different knife?

These were mainly during testing combos/substrates etc - for daily operation I pretty much only use the 1µ Boron Carbide for my Gyuto's/slicers and the 0.025µ Poly Diamond for my finer, push cutting parer I use exclusively to peel spuds with.

I finally only strop my parer on clean leather to maintain that razor-like glide effect when peeling potatoes.

The Gyuto's/slicers get lightly deburred on the back of the strop - @ 1µ Boron Carbide - that's it.

Rookie,

A few questions for you (or anyone else that wants to chime in).

I recently acquired an edge pro and have been very satisfied with the results thus far. I'm keen on changing things up a little and also adding some stropping to my routine.

1. Do you only use the freehand strops or can I get a good result with the EP strops? I'm worried that I'll screw up the angle when switching to a freehand strop.
2. So far I have just gone the full progression of EP stones through to the 1000 grit and then use the 2000 & 3000 diamond tapes. I'm not sure of any real difference in sharpness after the tapes but I do like the aesthetics!
3. I have a couple of MAC professional knives and they were pretty dull before I got the edge pro. I also recently purchased a Blazen Gyuto. Even though the MACs I have sharpened can shave arm hair and seem to have a nice even bevel (15° ) the Blazen seems to way out perform them out of the box - cutting potatoes for instance the Blazen just falls through the spuds whereas the MACs need a bit more of a push through and whilst I would not say they get wedged they certainly seem more sticky. I'm thinking it is just the finish on the Blazen as it seems more polished than my MACs. Or is it the steel type? Don't get me wrong, the MACs seem super sharp and if I did not have the Blazen I would not be asking but there is a noticeable difference.
4. What do people do with regard to blade maintenance on the rest of the knife? I notice most knives come with a brushed/satin finish either going parallel or perpendicular to the edge. Does anyone regularly refinish or polish the blade edge? If so with what and how? Do people feel that a smooth consistent finish on the blade (whether brushed or polished) gives better performance?
5. I'm thinking of changing a few of the higher grit stones but will probably wait until Mark puts up a set of the Shapton glass he has coming. Ultimately I'm thinking I will use the lower grit EP stones (if needed), then the Shapton 1k, 4k, 8k and then strop on the edge pro but with what..leather, balsa? Diamond, Boron Carbide? Maybe skip this and add one or two stones at the top end such as the Ozuku Asagi you mentioned???

Again, stropping. Is a once a week strop on the EP ok or should I try with a larger freehand strop??

One more thing. In another thread it was suggested the Blazen may be a little tougher to sharpen for a beginner. Why?

I think I have a disease. What was once more than sharp enough now seems just ok.
