What kind of knife should I purchase

Hi, my name is Robbie Powell. I like Japanese knives, and I'm left handed. I'm looking for something that is light, and controllable. I'm not too worried about pricing, and I do know how to sharpen knives. I am looking for an 8 inch Chef knife with pocket holes, or a 10 inch chef knife with pocket holes.

Please help me out.

1. Are you right handed?
2. What type of knife are you interested in (gyuto, nakiri etc..)
3. What size knife are you looking for?
4. Do you prefer carbon or stainless steel?
5. Do you prefer a western handle or a Japanese handle?
6. How much did you want to spend?
7. Do you know how to sharpen?

1. Are you right handed? No, I'm left handed
2. What type of knife are you interested in? I have no specific type of knife, except it should be Japanese
3. What size knife are you looking for? I'm looking for both an 8 inch and a 10 inch,
4. Do you prefer carbon or stainless steel? It makes no difference to me.
5. Do you prefer a western handle or a Japanese handle? Japanese handle
6. How much did you want to spend? Between $100.00 and $500.00
7. Do you know how to sharpen? Yes I do.

He's looking for a Gyuto
240mm range
He knows how to sharpen

Would like something easier on maintenance (stainless or clad)
Budget up to 250

Something of a medium, possibly a very good laser.

When you say pocket holes, do you mean dimples or kullens on the blade? Or are you referring to something else? (Edit: I see mark got to that. I missed it when I read over the thread.)

There is no need to spend $500 to get an extremely high quality knife.

Likes to rock cut, no preference on height. Used to a CIA 8inch chef's knife.
