My new Takeda Sasanoha 210 mm, is rapidly becoming my favorite knife. Very fun to use.

Takeda 150 petty and CCK until I went crazy and became a knife nut. Since then, still Takeda petty and Fujiyama 240. The Takamura jumps into the rotation when I want to do really fine prep. More recently I got a Teruyasu Fujiwara 210 that is threatening to take over the whole operation. Wife is threatening to use the CCK on me unless I clean out the knife drawer! Keep an eye on the classifieds...

I was looking at the TF 210s really interested in one or possibly the 195 (looks like a nice length for hotline work)

Of late it has been the Kohetsu Blue #2 210 gyuto. Pakka wood western handle so I don't have to oil or treat it nicely even though I do. Not too tall not too short, I use it like a gyuto and it doubles up as a long petty. Blue #2 gets sharp such that I can't really rock cut with it because it digs into the board all the time, however it does have a good enough profile for rocking, so end up pull, push cutting, and chopping. Cuts clean and effortlessly and sharpens right up with just a few strops.
