Tanaka KU...One helluva cheap and cheerful knife...been beaten, bent, twisted and polished. The imperfect machine. I dig the Tanaka style grind...thick n' thin...like a curvy woman all in the right places :)

Tanaka Ginsan Gyuto 240mm after sanding the spine a choile it became my go to knife it has awsome grindes and sharpens and holds an edge very well that is my prep knife at work i use my global 8 inchc chef knife :| as my line knife for now till i can upgrade

Either my Mac Pro chef knife or Fujiwara FKM Sujihiki. I've surprisingly been using the FKM a lot for prep tasks recently; it's light and agile for its 270mm length.

HHH AEB-L Gyuto. Has a great edge, super thin and light. And easy to maintain.

Would say I have 3. Masamoto KS when I'm paying attention. Richmond GT Artifex Wa-Gyuto when I'm just leaving it hanging around and don't want to worry about rust or banging it up and always love a petty so my Kochi Kurouchi Wa-Petty.

52100 Richmond SAB artifex. Still to this day the best hundred dollars I've ever spent. I don't know if anyone else has nicknames for their knives, but I call this my Clydesdale.
