Paring knife? Turnip knife? Small petty knife?

I have done some custom Thai fruit carving knives by modifying the shape of a paring knife. The actual Thai fruit carving knives from Thailand use an extremely poor quality steel (Kiwi brand) and I wouldn't recommend them for anything but their shape. You need those narrow radius tips to make those tight radius cuts for the smaller sizes petals especially.

I have the cheapies, as well, but thin tipped paring knives work, I find. The 75mm Kasumi is an example. It also has the advantage of a circular handle which has better ergonomics for holding the knife as one does while carving.

I do not think CKTG sells the 75 mm Kasumi.
Mel........What do you think of Tamahagene? Are they similar....or does Tamahagane has to reshaped?

CKTG no longer sells the Kasumi line as they aren't really anything special overall. The parer though has a particularly light & thin blade which works beautifully in this application. The Tamahagane is the polar opposite, and is by no means appropriate in said capacity.
