Cedar - It's very nice. The 52100 version is slightly taller at the heel than the AEB-L model, but otherwise it's about the same. I sharpened it to about 13 or 14 DPS and did the best I could at grinding down the bevel shoulders at a low angle to smooth the transition - same thing I'd do on an AEB-L Artifex. It sharpened easily and I put a mustard patina on it, which came out pretty well. It resides in a different location and I use it only occasionally, so I can't comment on edge retention.

I have eye-balled 52100 knives on occasion, but I see it used more in survivalist type knives, you know the crowbars with edges, than in kitchen applications and I just don't know what to make of it. Especially since I am spoiled with a variety of Hitachi carbon steels already.

Adam Marr has stated that 52100 is his favorite carbon steel if that tells you anything. Maybe he can expound on that a bit if he sees this.

I do have more knives than I need, but I rotate knives into the lineup because it makes work more interesting.
3 from takeda
2 from konosuke
3 from moritaka
2 from tadafusa
2 richamond
3 from tajiro
1 from F.Dick (with chef knives to go logo no side of blade)
1 from sakai takiuki
1 from hiromoto
6 gyutos from 180mm to 300mm amongst the above list
then there are the knives I no longer use, a Shun and some Henkles that I have yet to give away
maybe it is an addiction

Some of you people have a lot of knives! I discovered great knives about 3 years ago, and I now have (all lengths in mm):

Gyutos:

I also "have" a 180 Kanetsugu Pro-M gyuto (not technically mine, but I bought it for someone and get to use it quite a bit). However, I'm sure this list will expand. I see the 240 Yuki is back in stock . . . :lol:
