Western gyuto

Hi,

Great site! I've been looking through all the japanese gyuto knives trying to pick one out but there are so many. Whenever I do further research on them it seems a lot have fit and finish issues.

Maybe you can help me with a suggestion in the $100-$150 bracket, western style handle, non-damascus, stainless blade gyuto that has good fit and finish?

I like clean and minimal design, so the less lettering and logos on the blade the better.

Any handle that uses wood will have issues with fit and finsih becuase wood shrinks in the winter.

Try the Masamoto VG. It has a POM handle. Or try the Masahiro stainless. It also has a POM handle. Or switch to a wa gyuto since they don't have the same issues.

How about the Artifex 240mm of Fujiwara Stainless 240mm? The Fit and Finish on both is pretty nice.

Yeah, Artifex or Fujiwara would be a good bet.

Yeah, I always forget about that Hiromoto Ginsanko....a nice knife for sure.
