I bought a few knives and an Edge Pro in the past.
Now I would like to get a wa-gyuto knife, my original idea was to get a wa-handle Hiromoto AS but I've read that they are no longer available.
So, I wanted to ask you if it's possible to change the handle to a wa-gyuto type? Also, if this is not possible or too expensive, how do you compare the Hiromoto AS to your new line, Kohetsu? When will be de 240 mm be available?

Yes the many requests we received over the years led me to contact a manufacturer in Japan and they helped me develop the Kohetsu Aogami Super line of knives. In the short time we've had them they've become one of the best selling knives on our site. Great heat treatment and good stainless cladding with a nice wa-octagonal handle makes them very attractive at the price point we were able to do.
The 240s are in production but they got delayed a little so all we have currently are the 210s and 270s and the Santokus.http://www.chefknivestogo.com/kohetsuknives.html

Yeah, get the Kohetsu instead. Thinner blade, awesome grind, harder steel, all around much better performance at a better price than converting the hiromoto!
