I'm looking for a solid 210mm gyuto for under $150.
What are the thoughts of the Tanaka Kurouchi 210mm Wa-Gyuto ( http://www.chefknivestogo.com/taku21wa.html
)? It looks to have a nice grind.
Any other recommendations?

Please clarify your term "solid".
Do you mean solid as in a solid choice.
Or do you mean solid as in not clad....a mono steel knife in other words.

Solid choice. Originally I was thinking not clad but now I'm not sure that matters for this purchase.
I would like an easy to sharpen knife with a good grind.

I think you found my new knife! Does the 60 hardness mean it doesn't keep an edge as long?
Any other recommendation before I buy this one?
