I have a purchased a few knives off your web site some for me some for my wife and others for friends and family. I have a couple of Tojiro DP knives (great) a Richmond artifex (great) and a shun fillet knife (great). I was looking at the Tojiro DP gyuto 210mm or the Shun Sora 8" chef knife as a next purchase. I am purely looking for an opinion on which you would recommend as they are similar price and function.

I really like the Shun blade. I just don't care for the handle. The Tojiro handle is not that exciting but it feels better in my hand.

If I have to vote for one of the others I'd go Tojiro DP.

I like the Tojiro better, but the Shun actually has a thinner blade (handle aesthetics aside).

I haven't seen the Shun in person, but I love my Tojiro DP 210

Given that you have experience with the Tojiro I might lean toward the Shun just to try something new.
