Looks like we have a new line of knives on the menu boys & girls, GASSAN <--link, and from the sound of it, "Their knives may not be well known in whole Japan but are certainly in the No.1 position in Tohoku just like a crown in the kitchen knife field. Gassan makes each knife one by one with careful attention to detail and are well known for their excellent forging, heat-treating and grinding which are all done in house at their workshop. So really it is hand-made.", they produce a quality product.

I have no use for a 180 gyuto, but am curious to see what else they produce.

Oh wow... VERY nice looking blade! I like the "westernized" wa look as well. lol

I am in total agreement with Mel... that's a 180mm santoku. Not complaining as I like the santoku shape, but I'd love to see their longer versions and if the tip sweeps up into more of a gyuto/funayuki shape with those. I like the flatter profile with my shorter knives (a 180mm santoku would probably work fine for me) but I want more belly towards the tip with my longer ones.
