I'm really enjoying your videos Shaun. It's nice not only seeing the knifes in action, it's also watching your knife skills. I don't expect to get as good as you but watching you in action is helping.

I think what you are seeing is the little bit of a burr on one side (side on the bottom in the pic), which makes it look 70/30.
