Well this little jewel just came in today.

I did not have CKTG pre-sharpen even though I am currently stoneless (that fixes in a week).

Fit and finish, amazing. Beautiful handle, deceptively light blade, feels natural in my hands.

Today we did:
4 garlic cloves minced
Ginger, brunoise
Scallions bias cut
Onions julienne
Carrots julienne

Effortless cutter on everything except the carrots needed a little more force. The OOTB was sticking into my cutting board.
I can see this is going to be my go to knife... for a 210 it's light, excellent edge, great steel and amazing knife.

Just wait till you sharpen it, truly amazing work by the takamura brothers. Interested to see what else Mark brings in from them.
