 Post subject: How should I sharpen my Tojiros?

I just received the Tojiro 3 pc set DP GiftsetA as a birthday gift. I also noticed that you sell the Tojiro Pro Roll Sharpener. However, when reading the instructions included with each knife, it said to use a whetstone to sharpen them. I am confused. Can I not use the Roll sharpener to sharpen my knives and if not, why would Tojiro sell a sharpener they do not recommend to use?

Any information would be greatly appreciated.

Stones are better but you can use the roll sharpener if you don't want to sharpen with stones.

I have a whetstone. I have used it. I don't feel confident using it. I don't know if I am using it correctly and I noticed when I have used it, it has scratched the sides of the blade, so I know I am not using it correctly.

I highly recommend you learn to sharpen with a couple stones. I did a series of sharpening videos that will help you get started. Watch them and try it: http://www.chefknivestogo.com/knshforne1.html

Once you try it on your stone come back here and ask some questions and we'll help you get better. It's easier than you think. It just takes a few tries with some simple tips that the videos will reveal.

You may see some scratching along the blade even if you are using the stone properly. Grit from the stone can work its way up the blade and cause some scratching. There are some techniques for reducing the incidence of this, and you can always polish out any scratches that bother you.

The Tojiro have a fairly soft cladding which I have found scratches fairly easily. For me, my knives are tools and I care for them, but a sign of use here or there is a badge of honor for me. If you feel differently, use a bit of caution. Most of my scratches were actually from a magnetic knife rack with metal rails to hold the knives, so be aware if that is how you store your knives. I use a wood rack now, no problems since.
