Hi Mark,
I purchased the latte 400 and upon reviewing my other stones I think it could be about time for me to replace some of my other ones as well. I have naniwa stones in 1k, 3k, 8k and 12k (the 1cm ones with bases), and while the 8k and 12k are doing fine, the 1k is about halfway gone and the 3k has seen better days as well. I was looking at the choseras, but was wondering if there was something else you would recommend to bridge the gap between 400 and 8k. I am primarily looking for something that will work well against M390.
Thanks,
Scott

I like the super stones in the high grit range but not so much in the lower grit range. Try the Bester 1K stone. I think you would like it:

The 1k Nubatama Ume has been getting great reviews around here. http://www.chefknivestogo.com/nubatamaume1k1.html

The Ume or bamboo gold 1k would be a solid choice and able to handle a more wear resistant steel. Beyond that maybe the 4k bamboo to bridge the gap to the 8k SS?
