Do you have any pointers on the use of the handhelds? I just ordered 2 so I can give them a try. Also are there any videos that show proper technique using this system? Thanks in advance.

Mark the edge with a marker. Just the bevel on the knife which is usually pretty small. Then soak the hand held whet stone and grind of the marker using a scrubbing action. Inspect your work by feeling for a burr and looking at the edge. It takes a little practice but not much to get good results.
