Hi there people

I was just wondering if using paperwheels to sharpen my western knife collection is recommended?

I mainly use Victorinox but i do have some Wusthof Trident & Henckels knives.

I'm wondering also at what stage would the paperwheels come in handy?

These would only be used to sharpen them and not hone them?

If i were to hone the knives would you suggest the Idahone 1200 to be compatible with all these knives i just mentioned?

The wheels are a complete system.

They are good for doing lots of knives in a short period of time.

I personally would not recommend sharpening a blade with them too many times as they will remove large amounts of metal with each sharpening. You could use them to set bevels on new or used blades though accurately grinding a edge on a round wheel is about as difficult as it gets.

I avoid them because a belt sander is far more versatile, leaves cleaner edges and is more user friendly.

The Idahone works great honing those knives between sharpenings
