 Post subject: M390 sharping and polishing

So I got my M390 and I started wondering, when this get dull what am I going to do. Its doesn't like its going to lose its edge for a hell of a long time but makes me think that it will also take a long time to sharpen. I am think that some of my stones just wont cut this metal.

Beston 700
Shapton glass 1000
King 4000
Shabo Iromono (4k-10kish)
3M .5micro film

This is knife is a beast and would like to keep it tamed .What kinda stones would you guys use on M390?

I would pick up a Rika 5K instead of the King 4000, and then maybe something in the 8-10K range. I'm not sure how J Nats will do with this steel (I'm thinking they may be a bit slower??), it may be better to stick with synthetics, but I haven't tried my J Nats on it yet.

What is a Shabo Iromono? A natural stone?

I would def replace the King 4k. Pretty much anything else, Shapton GlassStone 4k, Shapton Pro 2k(I'm not fond AT ALL of hard stainless on the 5k), Suehiro Rika 5k, Naniwa SuperStone 5k...doesn't really matter, just upgrade or you will be bashing your head against a wall.

Shobu is the mine, Iromono is the layer of rock. Its like the shobu on CKTG but bigger. Sorry for the miss spelling.

Diamond what? Steel or stone.

I was thinking the king 4k had to go for a more aggressive cutting stone like the shapton glass stones also. I just ran the M390 through the Shobu and man did it waken up the heel allot more.

I wonder what madrookie is using on his M390?

Diamond hones and diamond compounds for polishing. When a steel becomes wear resistant enough the average sharpening tools become inefficient at grinding, sharpening, and polishing the steel.

Rookie used Sigma stones before, but now switched to Glass stones AFAIK.

100% correct - used Atomas to set the bevel though.

The Shapton Glass stones cut faster than the Sigmas and work really well on the M390 steel..

Ok here is my starting point. This has about one week of heavy use in a high end kitchen.

This metal is really hard to sharpen. At least with the stone I have. It took a long time to get a nice bur going. But on the other hand polishing happened in no time. I am about to cook dinner so I will let you guys know how its fairs with real cutting jobs soon enough.
