I would like to buy a knife (gyuto 240mm) for my father. He is right handed. He likes stainless, so I'm between:
Kanehiro Ginsan
Konosuke HD2
Suisin Honyaki

GS - the Kanehiro Ginsan is a pretty different style than the Konosuke and Suisin. The latter two are very thin, light laser style blades and the Kanehiro is a hand forged, refined rustic, medium-light Gyuto that will be a bit thicker overall (but thin at the edge) with a defined primary bevel.

What does your father use now as his main knife(s)?

He has a wusthof classic. He loves my Anryu... He is a homecook and like heavy knives.

If he likes stainless and is used to Wusthof I can't see you doing much better than the Kanehiro Ginsan. The Kono and Suisin will be much lighter than he is used to. The Kanehiro will be lighter also but not as dramatic a transition.
