 Post subject: looking for white steel gyuto.

Anyone out there had any experience with the ichimonji TKC white steel gyuto? ichimonji.co.jp offers white steel and something called toku-ko steel. Im curious as to the difference if anyone knows? really nice classy understated looking gyuto I think. I dont need to buy one but am tempted by the 240mm as I currently dont have a gyuto of that length. Sometimes its just nice to know that something is in the post and will arrive on your doorstep at some stage :D

might as well add this

1. Are you right handed? right handed
2. What type of knife are you interested in (gyuto, nakiri etc..) gyuto
3. What size knife are you looking for? 240mm. already have a lightweight 270mm and a heavy 250mm. so going again for something smaller and lighter
4. Do you prefer carbon or stainless steel? I'm more interested in carbon. I can handle the maintenance
5. Do you prefer a western handle or a Japanese handle? having got my first wa handle a few months ago I can safely say it is now my preferred handle, but in the case of the TKC thats ok
6. How much did you want to spend? +/-200
7. Do you know how to sharpen? I can sharpen to a useful level. not excellent, but good.

basically just interested in getting a full carbon knife to play around with. I loved the edge I got on the tojiro shirogami ITK petty, so got the hots for white steel now, but yeah any full carbon blade. my 250mm is stainless and my 270mm is clad so looking to try unclad

I'll third the recommendation for the Kono white #2....seems to be a perfect match as Mel noted.

For some reason or the other, I swear I had a Ichimonji white steel gyuto for a rehandle once.....but I can't find any notes on such. I will say that everything I've thus far seen from the company has been very good to freaking fantastic.

How does this compare to the HD series which has gotten raves on this site??? I am looking for a 270 Gyuto to compliment my new 240 Masakage shimo Gyuto.

Fishordie - as far as I know, the mono steel White #2 series has the same basic grinds, dimensions as the HH and HD series, just different steels. Pick a flavor :-).

thanks everyone, yep I'd love to get my hands on the konosuke white #2 but looks like they are always out of stock. as are the sakai yusukes etc. bearing in mind that I want to get one of these white #2 lasers in the future once they become available (considered the tadatsuna white#2 as they are available, but from pictures the profile is quite curvy), is there any competitive options against the ichimonji white#2 or kikuichi carbon elite? or actually and pros or cons to either or if they're much of a muchness. just to scratch the itch until the wa-lasers come back in stock : )
