 Post subject: 210mm Gyuto wanted.

Are there anymore knives you recommend for under 170 usd and consist of these property

1. 210mm blade length
2. gyuto
3.carbon steel blade
4.wooden handle (assume this means wa handle)

Also, is it hard to sharpen a double bevel edge i have not tried to sharpen this kind of blade before?

I really like the Moritaka AS 210 Gyuto: http://www.chefknivestogo.com/moritaka9.html. It's $10 over your price range, but it's a very good all around classic carbon steel performer. This knife is just a delight to use and it has great edge retention.

I like that knife to for you. It's a great knife, made with aogami super steel (carbon steel) and it's in your price range.
