Hi mark,

I'm left handed and have no experience with 70/30 knives. Is there a left handed hankotsu available and what would the cost be? Could I use a regular one without adverse effects?

Lefty here as well. You will likely find no steering issues with a 70/30 right biased grind. I have a couple 70/30 knives and have had no steering issues. You can also move the grind back closer to 50/50 by slightly altering how you approach sharpening. It is a relatively simple process to do.

Go with the hankotsu Mark recommended - the one that is purposely made 50/50. The others (Misono, Sakai Takayuki, and Kikuichi) are essentially flat on the left side and cannot be easily altered to neutral bias.

If you've got the budget, get the 50/50 custom hankotsu Mark carries by Butch Harner:

I'll +(whatever # we're up to) the Richmond version that's ground 50/50.
