Knives with the highest wear resistance hold an edge the longest. That would be powdered steels and stainless/semi stainless steels: ZDP189, HAP40, M390, SLD, etc...

However, these knives may or may not take as fine of an edge as modern carbons, White #1, AS, etc...which is why a lot of people prefer them for razors or very fine cutting tasks.

Desol, you make it hard to reply to a thread when you nail it on the first response.

PANKO <> I can't agree with you that DESOL answered the question as the question I'm reading is, "[I] wanted your opinions on what knife you regard as holding a great edge for the longest time?"

CHOPPER <> The longest lasting edge of great quality, for me, was on a 240mm Shiro Kamo Gyuto<--link in one of the powder steels DESOL listed.

True... but thats so specific ;)

I have a small pool to judge from. My AEBL Laser... but I know there is better edge retention out there.

I would rather summarize the steels than list off a large amount of different knives, etc, etc. Seems more efficient to me. And additionally, listing what knife has the best edge retention gets to into subjective preferences, and then the thread goes around and around....and around.

...and thanks Panko. :)

PANKO <> I agree it was a specific question (i.e., "what knife?"). The question I see is not, "what steel"; not even "what knives"... it is "what knife".

As always - I'm contentedly alone on an island, but I interpret answering a steel type in this context not quite apples to oranges, but ambiguous at best. Takamura's SG2 is different than Saji's SG2 is different than Kamo's SG2 is different than Tanaka's SG2, etc. I'm not the OP, but steel types do not answer the presented question. If I were posing the query and received said answer, obviously it creates the same damn question... around & around & around.
Image
"Oh. SG2/M390/COWRY/ZDP, eh? Well which knife maker's rendition of those do you regard highest as I know invariably that how a steel is treated is almost more important than the steel itself?" Or as it was originally queried, "...what knife [do] you regard as holding a great edge for the longest time?"

DESOL <> As your fellow self-proclaimed pragmatist, efficiency is most always paramount to me... thus my originally succinct answer.

I was relatively impressed by the OP's verbiage. He never asked what was best as you extrapolate; he asked what we thought held an edge longest. Yes, "great" is absolutely subjective, but he's not seemingly asking about the edge potential as much as he's asking about edge retention, and even then choosing the descriptor longest, albeit subjective, it's graded on a personal scale whereas one would know their own 5 days as to their own 7 days.

That said, I can't argue that my ramblings are worth anymore than a pair of pennies. 8-)

Yeah, heat treat, grind, maker... what you are cutting, what have you been cutting, what are you cutting on... So many variables.

Chopper, of the knives I own and have personally used, this knife I regard as being able to hold a sharp edge the longest.

I've used quite a few knives. This is the winner for wear resistant edge: http://www.chefknivestogo.com/kohagy21.html
