I am a newbie to Japanese knives and to this forum. I hope that I am posting this in the right area, it seem to be the best fit. Anyways, I just pulled the trigger on these knives for my kitchen:

Hittori FH JCK Forums Santoku 170mm
Hirimoto AS (Aogami Super) Gyuto 270mm
Masakage Yuki Sujihiki 300mm

How did I do?

Wow, 270mm gyuto. Is it for a home kitchen? ...Wish, I had enough room for a 270.

Very nice selection! Would love to hear your thoughts on the yuki suji.

You made a sound pick on the Hirimoto. Great steel, great profile. Hope you enjoy it.
Boy you like long knives! A 300MM Suji? I just bought a 270MM and I think that is plenty long enough.
Of course if you have a big family and you are slicing large cuts of meat, it will be a delight to use. White #2 steel can generate a great edge
which is very desirable in a slicer.

Thanks everyone. I got the 270mm for large batches of seasoning, and the suji for large roasts etc. Suji will not be an everyday knife.

I considered the Konosuke HD2 Suji, but got the Yuki.


CNTG wanted $300 for the Yuki and was out of stock on the Konosuke.

Nice diversity there. Solid VG10 in the Hattori, clad AS in the Hiromoto, and clad white steel in the Yuki.....lots of differences between the construction and the knives. And all of them nice knives.

I'd be happy with that setup any day. You do like the longer blades which for my taste is a bit overkill for home use. But to each his own.
