 Post subject: TKC or Maruyoshi?

Hi,

I have been looking at the Maruyoshi HD 270 mm gyuto

and the Kikuichi TKC 270 mm Gyuto

they booth seem to be good knives going by the reviews

which of the two would you recommend as having the better quality blade ?

I currently own a MCUSTA 240mm Zanami Hammer

I wanted a bigger blade to give me some thing different and to compliment to the MCUSTA.

I all so understand that the Maruyoshi is a heavier knife, not sure if it would be

of more benefit given the nimble nature of the MCUSTA

Your opinion might help me make up my mind, I am finding it hard to pick between the two.

They're both good. The Maruyoshi is fully stainless and has excellent grinds and fit. It's also got nice damascus pattern.

The TKC wins for steel quality.

I've owned both of these and you won't go wrong with either.

I have never used the Maruyoshi but I would recommend the TKC on steel alone. It sharpens up so easily it is amazing and holds it pretty well. The VG10 will hold the edge you put on it for much longer but it will be much much harder to sharpen. I actually have a used TKC 270 up for sale here post48340.html#p48340. Only reason I am selling it is 270 is a little large for me and some financial issues. New or used I would get the TKC, one of the best knives I ever purchased!

I'm with Jwesly, I haven't used the Maruyoshi but I would recommend the TKC just because it is a proven performer.

The TKC.....nothing against VG10, but it has to take a back seat to the steel in the TKC. Add to that the TKC is a freaking fabulous knife and not any reason in my book to get the other unless you're more interested in pretty.

TKC anyday, anywhere over VG-10. For me TKC over any knife I own in a professional setting atm. I did, however, find the one ingredient capable of staining it this past weekend; lemons, go figure, went to take a call from my purveyor and returned minutes later to a milky white stain on the left side of the blade. Function over form though. Amazing knife.
