Hi Mark,
Is there any chance you'll be restocking Sakai Yusuke knives anytime soon? I'm specifically looking for a 210mm thin gyuto in white steel.

Yes we should have them in the future, but I never know when they will show up.

I don't know if you know this but the Konosuke white #2 are nearly identical knives and we have them in stock. http://www.chefknivestogo.com/konosuke1.html

I've considered the Kono but I am looking for the really thin SY that's <2mm at the spine.

You might want to check out the Takamura r2 210. It is not a carbon white #2 but it is thin @1.62mm spine thickness. A bonus is it is on sale and in stock! Check out the resent review in the Customer Review section. They run longer and taller than the SY and Kono. I have the Kono 210 they measure short on the length and height compared to other 210s . I use it more like a large petty than a gyuto.

Every Kono white gyuto I've ever seen was the definition of a laser. Is the Sakai really thinner?

Yeah, like 1.3mm.

I can't roll with that takamura because I prefer carbon and wa handles. Sounds like a rad knife tho.

Sakai Yusuke did make a thinner version of their gyutos which has a spine thickness of 1.6 mm approx. The knives that CKTO stocks is the standard 2.2 spine thickness blade. I ordered a 240 from Mark about a year ago and it is a true laser. The specs are almost identical to the Kono white #2. I like the handle on the Sakai as it is slightly larger and it has a nice taper from the butt to the ferrule. The Kono has a nicer engraved Kanji and the Yusuke is stamped.

Yes Dino I just checked and the YS Ultra thin is 1.3 mm . and it weighs like 95 grams! I wonder how flexible the blade is being so thin. The standard thickness blade that I have is stiff enough for a laser.

I had read about that Sakai Yusuke thin elsewhere. Ridiculous specs.
