I'm interested in getting a 210mm or 240mm gyoto, with a western influence…

Excellent build, handle and steel…It seems I usually prefer carbon steel.

I would like to spend between $100-$170.

Any recommendations?

The misono swedish steel is a good one as well: http://www.chefknivestogo.com/misono3.html

In that range, the Misono Swedish is a nice fit.

The Hiromoto is the first knife that came to mind but I'd go for the 240mm: http://www.chefknivestogo.com/higykn24.html
